In a large non-stick skillet, cook bacon over medium heat for about 4-5 minutes per side, or until crispy. Transfer to paper-towel-lined plate to drain. Then break into pieces.
In a bowl, beat together eggs, milk, salt, pepper, and 1 cup of cheese.
Heat skillet over medium-low heat. Add butter and let it melt. Add egg mixture and cook until eggs and softly scrambled, stirring often. Taste and add more salt and pepper, if needed.
Warm each tortilla to make them soft and pliable. Fill each tortilla with egg mixture and then top with bacon. Sprinkle with salsa, avocado, remaining cheese, cilantro, and white onion, if desired.
